SPRING SAMBOS
I'm gonna be honest, I'm not one to frequent a sandwich for my lunch, however for these I will indeed make an exception.
I've seen both Coronation (+filler) and Chickpea 'Tuna' do the circuits, so I decided it was about time to give myself a go on the old sambo train.
So go forth and picnic with pride, since no, you plant eater aren't munching upon a falafel and hummus wrap! The very thought! You have cauliflower of the queens and chickpeas of the sea!

Coronation Cauliflower
For this recipe, you could easily swap the roasted cauli for chickpeas, as I've seen many a time, or maybe fake chicken . . ?
Ingredients
1/2 cauliflower, small florets roasted
2 tsp ground turmeric
1 tbsp curry powder
3 tbsp soy yogurt
2 tbsp vegan mayonnaise
Handful of raisins
1 tbsp mango chutney
1 tbsp lemon juice
1. Combine all wet ingredients , then stir though the cauliflower and raisins
Chickpea 'Tuna'
Ingredients
1 can of chickpeas
1-2 tbsp lemon juice
1 stick celery, finely diced
1 tbsp capers, minced
1 tbsp caper jar liquid
1 tbsp vegan mayonnaise
1 small red onion, finely diced
1/2 tsp garlic power
1. Slightly mash the chickpeas in a bowl, then combine with all the other ingredients
*Note: I did try this also with hummus in place of the vegan mayo. It obviously wasn't quite as creamy and it lacked a little something so I also added a bit of apple cider vinegar to give a bit of a tang which made it more flavourful!
